Sugaring program kicks off Saturday

The New Canaan Nature Center's Adopt-A-Tree and Community Sugaring Program gets underway Saturday, Feb. 8, from 10 a.m. to 2 p.m.

Families, individuals or groups get a chance each year to adopt the New Canaan Nature Center's sugar maple trees. The center taps nearly 50 trees throughout the property, with some being robust enough to handle two to three taps each.

On Feb. 8, participants will learn the process and take part in choosing and tapping a tree for the season.

Participants collect sap one to three times a week, depends on sap flow conditions, for the syrup season and take part in boil downs where maple syrup is made right at the center.

At the end of the season, all participants will be invited to the Maple Syrup Pot Luck Dinner, where each family or group will receive a bottle of New Canaan Nature Center maple syrup. Participants also will bring a maple syrup-themed food item to the dinner.
